Evelyn Lucille Junkins Schafer July 28,1938 - October 12,2021 Evelyn Lucille Junkins Schafer, 83 of Rochester, NH died October 12, 2021, peacefully at her home after a long illness.  Evelyn was the daughter of deceased parents Eugene and Ethel Junkins, wife of the late Ernest E Schafer and sister to Eleanor Brown (deceased). Evelyn had many loves but two of the most important were family and cows.  All you had to do was see her collection of cows on her Christmas tree, or listen to her talk about her cows that she showed in 4-H when she was a teenager, and you would know she loves cows She was well known to the Rochester community from working at Woolworth's Lunch Counter for many years, then IMC Magnetics and finally at UNH as a housekeeping supervisor. She was a lifelong member of First Congressional Church of Rochester. She taught Sunday School for many years and led the 5th and 6th grade youth group with her husband Ernest.
