Evelyn Lucille Junkins Schafer July 28,1938 - October 12,2021 Evelyn Lucille Junkins Schafer, 83 of Rochester, NH died October 12, 2021, peacefully at her home after a long illness.  Evelyn was the daughter of deceased parents Eugene and Ethel Junkins, wife of the late Ernest E Schafer and sister to Eleanor Brown (deceased). Evelyn had many loves but two of the most important were family and cows.  All you had to do was see her collection of cows on her Christmas tree, or listen to her talk about her cows that she showed in 4-H when she was a teenager, and you would know she loves cows She was well known to the Rochester community from working at Woolworth's Lunch Counter for many years, then IMC Magnetics and finally at UNH as a housekeeping supervisor. She was a lifelong member of First Congressional Church of Rochester. She taught Sunday School for many years and led the 5th and 6th grade youth group with her husband Ernest. Evelyn also volunteered her time at church events serving hot coco at the Rochester Christmas parade, helping at the yard-sales, as well as serving on numerous committees within the church.  Her greatest pleasure was serving guests at the monthly breakfast with her cow aprons, her beautiful smile and sense of humor. After retirement she volunteered as a Gram in the grandparent's program at the Head Start in Rochester.  She loved working with the children, it gave her tremendous joy, and was a particularly special time in her life. She would also remind any family with children to make sure you read to your kids, as it is so important. Evelyn had many achievements and honors that she was proud of.  Of note she was 1959 Past-Master of the Rochester Grange, being one of the first woman to hold this post.  She received the infamous VPFA Wildcat Award on January 22,1997 for saving many valuable resources in the Dimond Library from flood She is survived by her only child, Ernest C Schafer and wife Tamara Schafer.  Her grandchildren Saralena J Harris and her husband Jared, Evan C Schafer and Britta M Schafer, and great grandchildren Greyson and Oliver Harris. Memorial service will be held Saturday October 23th at 11:30am at the R.M. Edgerly funeral Home 86 S. Main St. Rochester NH 03867.
